Central Asian and Caucasian recipes with new vegetables

Abstract

This issue presents recipes highlighting the vegetables which are not traditionally used in Central Asia
and South Caucasus. About 60 recipes were included in this publication, however, more than 100 various
dishes can be prepared. We wish to introduce you to the diverse, beautiful, and nutritious vegetables which were commonly used in other parts of the world. The recipes were homemade and are designed to diversify diet and enhance human health
